One of the snacks I love most when I’m driving long distances is nuts, or my trail mix which I always take with me.  But I have been treating myself with some stupidly expensive maple almonds from the grocery store lately.  Like when I say stupidly expensive, I mean like $9.00 per small bag and I have eaten the entire bag in one sitting… in like 30 minutes before LOL thats ridiculous!  But stuff happens and especially when you’re driving, sometimes you just get hypnotized by the road and scenery, munching away.

So I wanted to try making my own maple almonds so I can have them whenever I want, for a fraction of the cost.  I have to say they turned out so delicious, and I think you can dress them up a few different ways too.  In the little bowl in the picture, I added a pinch of Cinnamon… so delicious too!  And then as i’m writing this, I was thinking you could even sprinkle a little shredded coconut on top too.  The almonds are a little sticky when they come out of the oven so that is the perfect time to add the coconut.

Salted Maple Almonds

Ingredients

  • 4 Cups Raw Almonds (skin on)
  • 1/4 Cup Pure Maple Syrup
  • 1 1/4 Tsp Sea Salt
  • Pinch or two Cinnamon (optional)

Directions:

  1. Preheat Oven to 325 F.
  2. Mix together the almonds and maple syrup coating all the almonds.
  3. Sprinkle the salt on the almonds and stir to coat.
  4. Pour onto a parchment paper lined baking tray.
  5. Bake for 20-25 minutes at 325 F.
  6. Let cool completely on the tray before transferring to a mason jar.
  7. If you want to add cinnamon, or shredded coconut, add it after the almonds have cooled for about 10 minutes and you can break them apart. Stirring in a bowl.
  8. Store in a mason jar or airtight container for up to 3 months in the refrigerator.

 

These are so delicious, nutritious and a great all around snack.  And of course Almonds are not only a good source of protein, but it’s also said that they are great for strengthening the nerves and bones.  Also a good source of trace minerals like Selenium, Manganese and Zinc.

 

 

Not wanting to promote eating and driving here, that is very unsafe and only eat these if you’re in the passenger seat while someone else is driving!  Safety first people!
